Recipe(tried): Zucchini Quiche

Zucchini Quiche

4 cups plealed & sliced zucchini
1 cup of onion chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon garlic powder
1/2 stick margarine
2 eggs
8 oz of mozzarella cheese

You can use either crescent rolls or a deep dish pie crust. Melt butter in a skillet, put zucchini and onion in for 10 minutes until tender, simmer. Add all spices & stir.

In a bowl beat eggs and add cheese, combine with zucchini mixture.

Pour into your pie crust. Bake at 375 for 18-20 minutes. Let stand for 10 minutes before serving.
