Got this from a Family Circle magazine last year...enjoy!

Fried Zuccini Sticks

1/2 cup all purpose flour
1/2 tsp salt
2 eggs
1/4 cup milk
1 1/4 cup dry, flavored bread crumbs
1 1/2lb zuccini, cut into 2 1/2" x 1/2" sticks
oil for frying

Combine flour and salt on waxed pape. Combine eggs and milk in small bowl. Place bread crumbs on second sheet of waxed paper. Coat zuccini with flour mixture; dip in egg mixture; coat with bread crumbs; place on baking sheet. Place sheet in freezer 10 mins.
Heat 1 1/2" of oil in anlectric frying pan or regular deep skillet to 375* degrees.
Working in 4 batches, add zuccini to hot oil; fry, turning with slotted metal soon to paper toweling to drain. Serve with bottled tomato sauce if you wish.
Makes 8 servings at 31 cents each
