Hobbs: Regarding the Pastrami

Hi Hobbs: Well I finally cut into the turkey pastrami. It is good, not great, but good. I am changing the recipe because I don't think there was enough time for the marinating, I'll go 3-4 days, not 2; and the dry rub that you put on at before you bake it should be at least 1/2 C more; also I baked it for 2 hours, not 1 1/2. It slices beautifully into thin, thin slices. Thank you for the recipe. Now I have to do the brisket, I think without the saltpeter. Have a good day.
