Recipe(tried): Holiday Surprise Bundles (Pillsbury flour bag, 1970's)

Not sure if this is the recipe you were looking for, but I use it every Christmas. The recipe is long, but it's way easier than it looks. There's just lots of flavor variations & options. Enjoy!

HOLIDAY SURPRISE BUNDLES

2 Eggs
2/3 cup sugar
1/2 tsp baking soda
1 cup dairy sour cream
1 1/2 cups flour*
1 tsp baking powder
1/4 tsp salt
1/3 cup butter, softened
Flavoring (refer to bundle variations)

*If using Pillsbury self-rising flour omitt baking powder, soda & salt.

Preheat oven to 350 degrees F. Grease and flour or paperline 18 muffin cups.

Lightly spoon flour into measuring cup; level off. In large mixing bowl, combine all ingredients. Blend at low speed until moistened, beat 1 minute at medium speed.

Spread 1 rounded Tbsp of batter into perepared muffin cups. Place one of the fillings in the center of each; top with additional 1/2 Tbsp batter.

Bake at 350 degrees F for 25-30 minutes or until golden brown. Immediately remove from muffin tins; cool.

Prepare icing; spoon over bundles. Store tightly covered in fridge.

BUNDLE VARIATIONS:

Plain:
1 tsp almond extract
1/2 tsp vanilla extract

Spicy:
1 tsp cinnamon
1/4 tsp nutmeg

Lemon/ Orange:
2 tsp lemon or orange peel
2 tsp lemon or orange juice

Nutty-Rum:
1 tsp ground nutmeg
2 tsp rum extract

FILLINGS:

Fancy:
1 maraschino cherry, drained
1 chocolate kiss
2 pure chocolate wafers
1 almond, pecan or walnut half
1 pitted date
1 tsp prepared mince meat

Simple:
1/3 cup sugar
1 egg yolk
1 8oz package cream cheese

In small bowl, combine all ingredients. Stir additional ingredients for flavor variations. Tint with food coloring, if desired. Use 1 tsp of filling per bundle. Filling for 24 bundles.

FLAVOR VARIATIONS:

Cherry Almond:
1/4 cup drained, chopped maraschino cherries
1/4 cup slivered or chopped almond

Orange or Lemon:
2 tsp grated orange or lemon peel

Brickle Nut:
1/4 cup crushed toffee
1/4 cup chopped nuts

Coco-Nut:
1/4 cup flaked coconut
1/4 cup chopped nuts

ICING:
2 cups powdered sugar
3 or 4 Tbsp milk
1 tsp vanilla
2 Tbsp butter, softened
*1 1/2 oz (2 1/2 Tbsp) cream cheese, softened

In small bowl, blend all ingredients until smooth; spread over cooled bundles. Tint with food coloring if desired. Frosts 18 - 24 bundles. Decorate bundles with decorator icing, colored sugar, candied fruit, nuts & other toppings.
