Recipe: Chicken with Spaghetti Alfredo (Workbasket magazine, 1970's)

CHICKEN WITH SPAGHETTI ALFREDO

2 1/2 pounds frying chicken drumsticks
1 envelope Italian flavor seasoned coating mix for chicken
2 green bell peppers, quartered
8 ounces spaghetti, uncooked
3/4 cup grated Parmesan cheese
1/4 cup butter
1 cup heavy (whipping) cream

Coat chicken with seasoned coating mix as directed on package. Arrange chicken in single layer in ungreased shallow baking pan.

Bake at 400 degrees F for 40 to 50 minutes or until tender. Place peppers in pan with chicken during last 25 minutes of baking.

Cook spaghetti as directed on package; drain. Add Parmesan cheese and butter, toss lightly. Gradually add cream and stir until smooth creamy sauce is formed.

Mound spaghetti in center of a preheated serving platter and arrange baked chicken and roasted peppers around spaghetti mixture.

Makes 4-6 servings
