Recipe: Quick Raisin Bread (using Biquick and yeast, Panasonic blender cookbook, 1970's)

QUICK RAISIN BREAD

1 1/4 cups warm water
1 package active dry yeast
2 tablespoons sugar
4 cups packaged biscuit mix, divided use (like Bisquick)
3/4 cup raisins

Put 1 1/4 cups warm water, yeast, sugar and 1 cup of the (dry) biscuit mix into blender container. Cover and blend just until mixed. Remove cover and continuing adding and blending in the biscuit mix, about 1/2 cup at a time, using a rubber spatula to scrape down sides of blender between mixing.

Turn batter into a greased bowl. Stir in raisins. Cover and let rise in a warm place for 30 minutes. Stir down and spread in a greased loaf pan (8x4x2-inches). Smooth the top and pat into shape. Cover and let rise in a warm place for about 30 minutes or until batter almost reaches top of pan.

Bake in a preheated 375 degree F oven for 50 minutes.


Makes 1 (8x4-inch) loaf
