Mediterranean Tuna Salad

1 cup tomato -- diced
1 tablespoon olive oil
1 tablespoon lemon juice
2 teaspoons Dijon-style mustard
1/4 teaspoon salt
1/4 teaspoon dried basil leaves -- crushed
1 clove garlic (large) -- minced
13 ounces sold white tuna in water -- drained and flaked
1/2 cup celery -- diced
1/3 cup fresh basil -- chopped
red lettuce leaves
1/2 pound green beans -- steamed
1 red bell pepper -- seeded and cut
--in strips
8 cherry tomatoes -- cut in half

Combine diced tomato, oil, lemon juice, mustard, salt, dried basil and garlic in large bowl; let stand 5 minutes. Stir in tuna, celery and fresh basil. Refrigerate, covered, 1 to 2 hours to allow flavors to blend, stirring once.

Line serving platter with lettuce leaves. Mound tuna salad in center; surround with green beans, bell pepper and cherry tomatoes.

NOTES : To quickly steam green beans in the microwave, place 1/2 pound green beans and tablespoon water in a microwavable dish. Cover tightly with plastic wrap. Microwave 4 to 5 minutes or until crisp-tender.
