Recipe: Pistachio Basmati Rice

Pistachio Basmati Rice
Serving Size: 4

500 grams basmati rice (a little over a pound)
25 grams pistachio nuts (about an ounce)
6 tablespoons coriander (cilantro) leaves chopped
2 tb good olive oil

Heat the rice, oil with salt & pepper to taste in a caldero or Paellera. Saut for a few minutes. Add the double amount of rice in already boiling water. Cook at medium heat, uncovered until all water drains. Move once, add the Pistachios, cilantro & cover. Cook for 20 minutes. Ready to serve, fluff with a fork before serving.
