Fast & Easy recipe from my sister. Feeds only 2 and maybe 3 so it is worth making double.
HAM HURRY CURRY
2 tbsp. butter
1 onion, chopped
2 tbsp. flour
1 1/2 tsp. curry powder
1 tsp. sugar
1/2 tsp. ground ginger
1/4 tsp. salt
1/2 cup beef broth
1/2 to 3/4 cup milk
1 cup cooked ham, cut in small cubes
Saute the onion in the butter until the onion is soft but not brown.
Mix the flour, curry, sugar, ginger, and salt together in a small bowl. Add to the onion and mix and cook to make smooth.
Take off heat and add the beef broth. Mix in the milk slowly and add the ham. Put back on the stove and simmer for 5-10 minutes adding a little milk if sauce gets too thick.
Serve over plain boiled or steamed rice.
NOTE: Any cooked leftover meat can be used in place of the ham.
