Recipe: Hot and Sweet Chicken Salad (using cooked chicken, apricot jam and jalapenos)

HOT AND SWEET CHICKEN SALAD

1 medium jalapeno pepper*, seeded and minced
2 tablespoons apricot jam
2 tablespoons white wine vinegar
1 tablespoon vegetable oil
2 cups diced, cooked chicken breast
3/4 cup roasted and salted almonds (or 1 large stalk celery, thinly sliced, or 1 cup chow mein noodles)

In cup, combine jalapeno, jam, vinegar and oil. Stir well.

Place chicken in salad bowl. Pour dressing over chicken. Refrigerate until serving time.

Just before serving, sprinkle with almonds, celery or chow mein noodles. Toss gently.

*Jalapeno peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

Makes 4 servings (1/2 cup each)
