Recipe: Smoked Salmon Hash Browns (using frozen hash brown potatoes)
Breakfast and BrunchSMOKED SALMON HASH BROWNS
3 cups frozen hash brown potatoes, thawed
2 pouches (3 ounces each) smoked Pacific salmon*
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/4 teaspoon black pepper
2 tablespoons vegetable oil
Combine potatoes, salmon, onion, bell pepper and black pepper in large bowl; mix well.
Heat oil in large nonstick skillet over medium- high heat. Add potato mixture; spread to cover surface of skillet. Carefully pat down to avoid oil spatter.
Cook 5 minutes or until crisp and browned. Turn over in large pieces. Cook 2 to 3 minutes or until browned.
*Smoked salmon in foil packages can be found in the canned fish section of the supermarket. Do not substitute lox or other fresh smoked salmon.
Makes 4 servings
