sandy,wis (01:58:39) : stuffed chicken, Jamaican style

1 roaster chicken or capon about 6 lbs.

sweet potato stuffing

1.rub cavities of chicken with a mixture of salt and pepper.lightly fill body and neck cavities with sweet potato stuffing.truss.brush skin throughly with melted butter.
2.place chicken breast up, on rack in a shallow roasting pan.spread a piece of cheesecloth which has been dipped in melted butter over the top and sides of chicken.
3.roast uncovered at 325 degrees 3 to 3 1/2 hours or until thickest part of drumstick is tender.keep cloth moist durning roasting by brushing occasionally with fat from pan.
sweet potato stuffing:
combine 1 1/4 cups mashed sweet potatoes,7 slices bread,toasted and cut into cubes, and 1/2 cup finely chopped celery in a bowl.put 6 pork sausage links and 2 tblsp water into a cold skillet.cover and cook slowly for 8 to 10 minutes.remove cover and pour off fat.with a fork break links into small pieces.add 1/3 cup chopped onion and cook over medium heat until onion is transparent and sausage is lightly browned.remove from heat and stir in 1/4 tsp salt,1/4 tsp pepper,1/2 tsp ground thyme,1/4 tsp sage,1/4 tsp crushed marjoram leaves and 2 tblsp butter.add to sweet potato mixture and lightly mix together.

Baklava-super easy!!!
Prep time: 45 min. bake time: 45 min. makes 48 servings

1 pkg. pepperidge farms phyllo dough, thawed
2 cups finely chopped nuts
2 1/2 cups sugar
2 tsp. ground cinnamon
1 1/2 sticks margarine, melted
1 cup water
1/2 cup honey
1 tbsp. lemon juice

preheat oven to 350 F.Mix walnuts, 1/2 cup sugar & cinnamon. Brush 3-qt. baking dish (13" x 9") with margarine. Remove 2 sheets leaving remaining dough covered with plastic wrap or damp towel. Place sheets in bottom of dish. Fold edges neatly into dish. Brush top sheet with margarine. Repeat layering of 2 sheets and margarine 3 times making a total of 4 layers. Sprinkle 3/4 cup walnut mixture over sheets. Repeat layering of 2 sheets and remaining walnut mixture. Repeat layering of 2 sheets and margarine until all sheets are used. Fold edges of top 2 sheets under to form smooth top. Use sharp knife to cut lines in top layers of dough 2 " apart lengthwise and crosswise, to form squares. Score each square in half diagonally to form triangle. Bake 45 minutes. to prepare syrup: while baklava is baking in saucepan mix remaining sugar water honey and lemon juice. Heat to a boil. Cook over low heat 10 minutes. Cool 30 minutes. Gradually pour syrup over hot baklava. Let cool 2 hours. Cut on score marks.

This stuff tastes great.

KellyWA (08:10:08) : Chicken Chardonnay

4 boneless skinless chicken breasts
3 T. olive oil
1 cup thinly sliced mushrooms
1 small onion, diced small
1 t. chicken bouillon granules (or 1 cube)
1/2 c. warm water
1/2 c. chardonnay wine
1 T. fresh tarragon, or 1/2 t. dried, crumbled tarragon
1 sprig fresh thyme, or 1/2 t. dried, crumbled thyme leaves Heat the olive oil in a skillet over medium high heat. Saute the chicken breasts on both sides, turning frequently. Turn down the heat to medium, and continue to cook until the chicken is done on the inside. Add the mushrooms and onion and cook for about 5 minutes, stirring to redistribute them on the bottom of the pan. Dissolve the bouillon in the water. Add the water, wine, and herbs to the pan. Continue cooking until most of the water evaporates and you are left with a tasty sauce for the chicken. Serve the chicken with the sauce spooned over the top. Accompany it with a mixture of long grain and wild rice, a diagonally sliced baguette, and a fresh green salad with tomatoes.

1-1/2 lbs ground beef (I use ground
sirloin)
1/2 cup bread crumbs
1 egg, slightly beaten
1 pkg. dry onion soup mix
1 can cream of mushroom soup
1 can cream of celery soup
1/2 can tomato soup

Mix first four ingredients; shape inot patties and place in 9 x 13 pan. Cover pan with foil . Brown patties in 350 degree oven for about 20 min.
Remove from oven, take patties from pan and drain grease and wipe pan with paper towels. Return patties to pan. Mix the soups together and pour over patties. Cover pan with foil and return to 350 degree oven for 35 to 40 minutes.

KellyWA (05:55:09) : Maraschino Cherry Cake

1 1/2 c sugar

5 oz. bottle maraschino cherries. Save
juice and add enough water to make a
cup (chop cherries)

1/2 c butter

2 1/2 c cake flour

2 round tsp. baking powder
3 large egg whites

1/2 tsp. salt

Cream sugar and butter thoroughly; add
liquid and dry ingredients gradually, add cherries and lastly fold in egg
whites. Bake at 350 degrees until done.

3 teaspoons oil
1 medium onion, -- thinly sliced
1/2 teaspoon cinnamon
4 ounces diced green chilies
1 pound ground turkey
4 teaspoons chili powder
14 1/2 ounces whole tomatoes, can
1/4 ounce unsweetened chocolate -- chopped

Heat oil in heavy skillet over med high heat. Add ground turkey, sliced onion, chili powder, cinnamon and cook until turkey is cooked through, stirring to break up turkey - 7 min. Add tomatoes and green chilies. Reduce heat -- simmer 10 minutes. Add chocolate and simmer untl most of liquid is absorbed -- about 10 minutes. Season.

This is so tasty -- not sure whether this comes from Bon Appetit or Gourmet

2 cup flour 1 teas baking powder 1 teas baking soda
1/2 t salt 3/4 cup w or brown sugar 1/2 cup shorting
2 eggs 3 bananas 1/4 cup nuts

Bake at 350* 40-45 minutes

3 each eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
2 cups zucchini, coarsely grated
2 cups flour
1 tablespoon cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup chopped walnuts

Beat 3 eggs. Add and beat until lemon colored -- sugar, oil, vanilla. Stir in zucchini, flour, cinnamon, baking soda, salt and baking powder. Fold in chopped nuts. Pour into 2 greased and floured loaf pans or 4 mini loaf pans.

1/2 pound hamburger
1 cup bean sprouts
1/2 cup water chestnuts -- sliced
2 tablespoons chopped onion
1 envelope Lipton beef and mushroom soup
2 packages crescent rolls

Brown hamburger in margarine. Add other ingredients. Place top of mixture on 1/2 crescent roll. Pinch tops together. Bake on greased cookie sheet for 15 minutes at 375.

1 1/2 tbls poppy seed
1 cup oil
1/3 cup vinegar cider
3/4 cup sugar
1 tbls onion juice
1 tsp dry mustard
1 tsp salt

Beat well then add poppy seeds and mix again. Serve over fresh fruit.

FATTOUSH SALAD

2 Loaves syrian bread
2 whole cucumber
1 head iceberg lettuce
2 medium tomatoes
1/2 cup red oion
1/2 cup parsley
1 teaspoon mint
1/2 cup green pepper
1/2 cup lemon juice
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon pepper

Separate and toast all halves of syrian bread until crunchy. Set aside. Slice cukes into thick slices and quarter. Mix Cukes, lettuce, tomatoes (chopped), red onion, green pepper and parsley. Mix lemon juice, olive oil, salt and pepper. At the last minute pour dressing over veggies (first sprinkle mint) and toss. mix in syrian bread pieces.

Chocolate Drop Cookies

1 package dark chocolate cake mix, without pudding
1/2 cup cooking oil
2 eggs
1 cup mini-M&M's

Preheat oven to 350. Blend cake mix, oil and eggs and mix well. Fold in the M&M's. Drop from a teaspoon onto an ungreased cookie sheet. Bake at 350 for 10-12 minutes, until cookie tests done with a toothpick. You don't want them too fudgey, they will fall apart when cooled. Cool on cookie sheet about 1 munte, then remove to rack to finish cooling.

Peanut butter cookies

1 package yellow cake mix, without pudding
1 cup peanut butter
1/2 cup cooking oil
2 tablespoons water
2 eggs

Preheat oven to 350. Combine all ingredients and mix well. Drop from a teaspoon onto an ungreased cookie sheet. Press a criss-cross on each cookie with fork prongs that you have dipped into sugar. Bake at 350 for 10-12 minutes, until golden. Cool on cookie sheet for about 1 minutes, then remove to racks to finish cooling.

1/2 cup butter
1 cup sugar
1 each egg
1 cup chopped dates
2 cups Rice krispies
1/2 cup chopped walnuts
1/2 teaspoon vanilla
grated coconut

Put first 4 ingredients in saucepan. After it comes to a boil, cook 5 minutes (watch that it doens't burn) Remove from heat. Add 2 heaping cups Rice Krispies, 1/2 C chopped nuts and 1/2 tsp vanilla. Roll in grated coconut -- about a good heaping teaspoonful.

PERFECT FOR THIS SEASON!!

Margie,.MD (12:04:37) : This is from the Pepperidge Farm Cookbook, by Margaret Rudkin. I have not tried it.

Cream of Chicken Soup

4 cups chicken broth, homemade or canned
4 tablespoons butter or chicken fat
4 tablespoon flour
salt and pepper to taste
1 cup cream

Over direct heat, melt the butter in the top of a double boiler. Add the flour and cook for 2 minutes, sitrring constantly. Remove the pan from the heat and add slowly, stirring constantly, the chicken broth. Return to the heat and bring just to a boil, stirring constantly. Place over boiling water and add the cream. Taste for seasoning and add salt and pepper if needed.
I have tried some other recipes from this book and they have turned out.

Margie,.MD (11:48:21) : This would make a neat Valentine's dessert. My grandmother used to make it and I have too.

Cherries in the Snow

2 packages Dream Whip
1 cup confectionary sugar
1 cup milk
small package cream cheese
2 tsp. vanilla
1 can cherry pie filling
angel food cake, cut into pieces

Beat Dream Whip, milk, and cream cheese together. Add the sugar and vanilla, beat together until smooth. Place pieces of angel food cake into a pretty bowl (clear glass is nice), and pour cream cheese mixture over top of the cake. Place cherry pie filling over top and refrigerate several hours. Delicious.

KellyWA (11:00:12) : Honey-Roasted Nuts

6 cups peanuts or any combination of pecans,
almonds, cashews, walnuts or mixed nuts
1/2 cup Sue Bee Honey
1/3 cup margarine
1 tsp. cinnamon
1 tsp salt (if using unsalted nuts)

Melt together honey and margarine. Pour over nuts and mix. Spread mixture on a cookie sheet and sprinkle with seasonings. Bake at 350 degrees for 15 to 20 minutes, stirring several times, until golden. Spread mixture onto waxed paper and cool completely. Break nuts apart and store in an airtight container.

Judy/AZ (10:39:08) : This is suppose to taste like honey roasted peanuts.

"NUTS TO YOU"

2 c. raw Spanish peanuts
1/2 c. water
1 c. sugar
1/4 tsp. maple flavoring

Mix all ingredients together and cook until thick and
dry. Bake 45 minutes at 300 degrees. Stir every 15 minutes. Tastes
like the honey-roasted nuts.

HOMEMADE BREAD PUDDING

3 1/2 c. dry bread crumbs (more if the
bread is fresh)
2 eggs, beaten slightly
1/3 c. raisins, plumped for a few
minutes in hot water
1 tsp. vanilla
3 c. warm milk (may use more or less)
1/2 c. sugar (more or less as taste
dictates)
1/2 tsp. salt
Butter and nutmeg, if desired

Soak bread crumbs in warm milk for 10-15 minutes. With a fork blend in remaining ingredients, turn into a
buttered baking dish and bake uncovered for about an hour. The dish may be placed in a pan of hot water
to bake. Especially if more milk and eggs are used in a more custard-like pudding, it's better to place it in the
pan of hot water. Watch so that it does not bake too long and become watery. Insert a knife about an inch in
from the edge and it should come clean. Change the recipe into a Butterscotch Bread Pudding by cooking a
syrup of 1 cup brown sugar and 4 tablespoons butter or margarine to use in place of the white sugar. Ripe
bananas sliced and dipped in lemon juice gives a totally different taste to your bread pudding. Any favorite
spices may be added. Vary it by adding 1 chopped apple, 1/2 cup applesauce, dates, nutmeats, 1/2 cup
drained crushed pineapple, or 1/4 cup orange marmalade. One-half grated coconut may be substituted for
part of the bread.

Gina,.Fla (08:08:27) : Grecian Chicken Breasts

serves 6, can easily be halved. Also, can be prepared and frozen to be baked at a later date, just thaw and bake. I make them all and freeze the ones I am not using or bake them all as they will be used for lunch the next day, they just don't last!
6 boneless, skinless chicken breasts, split
1 pkg. (10oz.) frozen chopped spinach, thawed
1 pkg. (8oz.) feta cheese, crumbled
1/2 cup mayonnaise
1 clove garlic, minced
1/4 cup flour
1/2 tsp. paprika
12 strips bacon

Preheat oven to 325. Cut a pocket into each breast, salt and pepper to taste and set aside.

Thoroughly drain and squeeze any liquid from the thawed spinach. Do not cook. Combine with feta cheese, mayonnaise, and garlic. Stuff into the pockets.

Combine the flour and paprika and lightly coat the stuffed chicken breasts. Wrap 2 strips of bacon around each breast and place on a baking sheet. Bake uncovered at 325. for 1 hour. Unbelievably delicious!!!
