BISCOTTI L'ORANGE
1 cup sugar
3 eggs
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1/2 teaspoon orange extract
3 cups all-purpose flour
1/2 cup chopped walnuts
3/4 teaspoon baking soda
1/4 teaspoon salt
vegetable cooking spray
Preheat oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray.
Combine sugar, eggs, orange rind, vanilla, and orange extract in a large bowl; beat at medium speed of a mixer until well-blended; set aside.
Combine flour, walnuts, baking soda, and salt; gradually add to sugar mixture, beating until well-blended.
Turn dough out onto a lightly floured surface, and knead lightly 7 times. Shape dough into a 16-inch-long roll, and place on the prepared baking sheet; flatten roll to 1-inch thickness.
Bake at 350 degrees for 30 minutes. Remove roll from baking sheet; let cool 10 minutes on a wire rack.
Reduce oven temperature to 325 degrees F.
Cut roll diagonally into 27 (1/2-inch) slices, and place, cut sides down, on baking sheet.
Bake at 325 degrees F 10 minutes. Turn cookies over, and bake an additional 10 minutes (the cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet, and let cool completely on wire rack.
