4 CHEESE LASAGNE
1 1/2 pounds 93% lean ground beef browned
1 medium onion, finely chopped
1 1/2 cups sliced mushrooms (optional)
1 1/2 teaspoons Italian Seasoning
36 to 48 oz of your favorite tomato/spaghetti sauce
1 box lasagne noodles, cooked al dente
1 1/2 quarts small curd cottage cheese
4 to 5 cups shredded cheddar cheese
4 to 5 cups shredded Parmesan cheese
16 ounces sliced Swiss cheese
Brown ground beef and onion (mushrooms optional). While browning add Italian seasoning. Once browned set aside.
In a deep 13X9-inch casserole dish or slightly larger spray it with PAM. Mix meat mixture and some of the spaghetti sauce together.
Now place a layer of noodles on the bottom. Spread a layer of cottage cheese over noodles (Not Too Much). Next layer tomato sauce over cheese. Now sprinkle cheddar shreds over sauce/meat mix. Sprinkle a layer of Parmesan shreds over that layer. Now layer Swiss cheese over other cheeses.
Now repeat this process until casserole is about 3-inches deep with layers.
Bake in a preheated 375 degree F oven for 45 minutes.
TO FREEZE AHEAD:
You can freeze portions of this for quick meals. Remember to freeze in portion sizes so as to make it easier and quicker to warm in the microwave.

BTW this is not low-calorie.. WEG but it is great tasting.
