Recipe: Albondigas Soup

ALBONDIGAS SOUP
1 lb. ground beef
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. cumino
1/2 tsp. gran. garlic
2 Tbsp. rice, uncooked
2 Tbsp. diced onion
1 Tbsp. masa harina flour
1 egg
1/4 c. fresh diced cilantro
Soup:
1 gal. beef broth
1/4 c. Kitchen Bouquet
1 medium diced tomato
1/2 c. rice, uncooked
2 carrots, diced
6 celery sticks, diced
1/2 bell pepper, diced
3 oz. diced cilantro
3 oz. can green chilies
Mix first 10 ingredients together and make into small meatballs. Mix together the soup ingredients and add the meatballs, simmer low heat several hours, stirring occasionally. Serves 8.
