AMARETTO SQUARES
1 box (2-layer size) yellow butter cake mix
1 stick (1/2 cup) butter, melted
4 eggs, divided use
1 (1 lb.) box confectioner's sugar (reserve 1/4 cup)
3 eggs
1 (8 oz.) pkg. cream cheese, softened
1/4 cup Amaretto
Mix together cake mix (dry), butter, and 1 egg. Press into bottom of 9 x 13-inch pan. Set aside.
Combine confectioner's sugar (minus reserved 1/4 cup), remaining 3 eggs, cream cheese, and amaretto. Mix low with mixer until creamy. Pour over cake mixture in pan.
Bake in a 325 degree F oven for 45 minutes.
While hot, sift the remaining 1/4 cup confectioner's sugar over top.
Cool and cut into squares to serve.
Noted on recipe: "These will freeze beautifully and can be served as needed."
