1 beef roast approx. 4-5 lbs (I used sirloin tip)
24 ounces jarred pepperocini peppers and juice
garlic slivers

Make slits all over roast and insert garlic slivers. Place in crockpot and empty jar of pepperoncini over it. Cook on low 8-10 hours.
The vinegar from the peppers makes the beef very tender and the peppers get very soft and meaty tasting.

Another method is to use 24 ounces of pickled vegetable blends, with peppers, carrots, cauliflower, celery, etc. Adds color.
