Recipe(tried): Amber Pear Preserves

Preserving - Jams, Jellies
This recipe is approx. 100 years old and you're in for a treat.

AMBER PEAR PRESERVES

4 cups under-ripe pears
3 cups sugar
1 1/2 tbsp lemon juice

Peel and chop the pears. Add the sugar and lemon juice and let stand overnight.

Stir pears, place in a cooking pot and simmer on low until pears turn an amber color, about 2 hours; go by the color. Stir often to be sure it isn't sticking.

Pour into prepared jars, using all the juice, and seal.
