Recipe: Peppermint Jelly

Preserving - Jams, Jellies
PEPPERMINT JELLY

a few handfuls of fresh peppermint leaves
1 tbsp of lemon juice
4 1/2 cups sugar
3 oz liquid pectin

Crush leaves in your hands, then place into 2 quarts of boiling water to make a strong tea. Boil for 10 minutes. Measure out 4 cups of the tea and place in a saucepan.

Add 1 tbsp of fresh lemon juice and bring to a boil.

Remove from heat and add the sugar and pectin. Bring to a full boil again and hold at a boil while stirring constantly for 1 full minute.

Remove from heat, skim off foam, and pour into hot, sterile jelly jars and seal. Process in boiling water bath for 10 minutes.

Some people like to add green food coloring, but it is a matter of personal preference.
