My motherinlaw, God Bless her soul,gave me this version of American Chop Suey when I married her son 25 years ago! She was a Hew Hampshire girl!
1 (16 oz) box elbow macaroni
1 lb chop meat (ground beef)
butter or margarine
1 medium-sized onion, chopped
1 cup to 1/2 cup chopped green bell pepper
1 can condensed cream of tomato soup
1 (14 oz) can chopped tomatoes
1/2 cup of bread crumbs
3 Tbsp butter or margarine, melted
Cook macaroni according to package directions (I slightly under cook it.)
Preheat oven to 425 degrees F.
In large fry pan brown meat. Remove from pan and set aside.
Add some margarine to pan and saute onions and peppers until soft.
Add back meat, tomato soup, and tomatoes; simmer for 10 minutes. Add salt and pepper to taste.
In buttered casserole dish add macaroni then meat mixture; stir to incorporate. Sprinkle bread crumbs on top then drizzle melted butter over crumbs.
Bake 425 degrees for 20 to 25 minutes.
This dish is a family staple in my house!
