Recipe: Moist Oatmeal Cake (with topping using brown sugar and lemon juice)

MOIST OATMEAL CAKE

1 stick (1/2 cup) butter
1 cup quick-cooking oatmeal, uncooked
1 1/2 cups boiling water
1 1/2 cups flour
2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
2 eggs, beaten
1 cup brown sugar
1 cup white granulated sugar
Topping (recipe follows)

Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.

Break stick of butter into small pieces. Stir in oatmeal. Pour 1 1/2 cups boiling water over - stir until butter melts.

Mix together flour, cinnamon, baking soda and salt . Add to oatmeal mixture. Add beaten eggs, brown sugar, and white sugar; beat. Pour into prepared baking pan.

Bake at 350 degrees F for 30 minutes.

TOPPING

Brown sugar
Shredded coconut
Juice of 1 lemon

When cake is done, sprinkle (while hot) with brown sugar, shredded coconut and squeeze the juice of one lemon over all.
