ANGEL COOKIES
1 pkg. Angel food cake mix
1/2 cup diet strawberry soda (or diet 7-up/lemon-lime soda)
1 1/2 tsp. almond extract
1 (7 oz.) pkg. flaked coconut
Preheat oven to 350 degrees F. Cover cookie sheet with foil (use new foil for each batch).
Mix together cake mix, diet soda and extract for 1 minute. Beat on medium speed 1 minute longer. Fold in coconut. Drop by level tablespoons on cookie sheet.
Bake 350 degrees for 10 to 12 minutes. Remove to cooling rack while still hot.
Makes 4 dozen cookies
