This is one is also very easy, fattening but oh so wonderful! Please give it a try. It is always on our menu for the holidays.
Broccoli Rice Casserole
1 small yellow onion,finely chopped
6 Tbls. butter
1 (16 oz.) pkg.frozen broccoli
1 can cream of chicken soup
1/2 cup cheese whiz or Velveeta cheese (chopped into pieces)
3/4 cup Minute rice
1/3 cup milk
1/4 tsp. salt
Cook broccoli as package directions specify. Meanwhile saute chopped onion in butter until soft but not browned. Add rice & salt to onions. Cook & stir for 5 minutes. Add soup, milk & cheese,heating until cheese melts. Drain cooked broccoli & add to the cheese mixture, stir & pour into a lightly buttered casserole dish. Bake for 25 minutes at 350 degrees or until heated through.
