Easy Chicken Cacciatore

1 (10 oz.) pkg. frozen chopped spinach
2 tsp oil for frying
2 cloves garlic, peeled and sliced or
2 tsp. minced garlic
1/2 chopped onion
4 skinless chicken breast halves
1 lb sliced mushrooms
1 (16 oz.) can stewed tomatoes
1 tsp oregano
pepper to taste
Preheat electric skillet to 350 F. Thaw spinach in colander. Heat oil in skillet, add garlic and onion. Add chicken breasts and brown for 5 minutes. Turn carefully with a spatula and add mushrooms. Stir for 3 minutes. Add tomatoes, spinach and spices. Cover the skillet and cook for 10 more minutes. Serve over hot cooked noodles or with French or Cuban bread.
