Recipe(tried): Another chicken & dumplin's

Hi Jean this is probaly too late for you but thought i'd share this one with you I LOVE it.
I am coping form rcipe book but I do it this way and it is good! I ESP love the dumplings they have a little butter and are nice with fresh parsley AND i have made with apple jusice instead of milk for a nice different flavor try it sometime :)

3-6 pounds stewing chicken (whole fryer is fine)
water
4 stalks celery
1 carrot (I don't usually put in carrots or celery -- kids)
1 onion cut up
2 spripgs parsley
1 bay leaf
salt and pepper
Place chicken in large pot and cover with water add other things onoin for sure and veges if you use them.
bring to boil reduce heat and simmer 2- 2 1/2 hrs till chicken is done.
Fryers requre less time as they are young stewing chick require longer as they are older birds
remove chickne when done and cool to debone then reurn to broth make the dumplins below and carry on ....

dumplings:
1 cup all purpose flour
2 tea baking powder
1/2 tea salt
stir in 2 TAblespoons snipped parsley
beat in 1 egg
stir in 1/4 cup milk (or apple juice we love that!)
and 2 Tablespoons butter, melted
stir just till blended
drop 6-8 dumplings from a spoon into boiling broth
cover TIGHTLY, return to boiling and then reduce heat DON'T peek :)
simmer for 12-15 min or till done.

remove dumplings and chicken to serving plate.

strian broth (i don't if no veges) bring 4 cups of the broth to boiling.
Stir 1 cup cold water insto 1/2 cup flour*** gradually add to boiling broth mixing well. cook and stir till bubbly sitr in salt and pepper and pour over chicken & dumplin's

*** I like to make my gravy's with corn starch but don't use this much when i do i add enough to make it a nice thick gravy :)
