Recipe: Apple and Date Cookies (using oats and walnuts)

APPLE AND DATE COOKIES

"If you love moist and chewy cookies, you'll love this cookie!"

2/3 cup butter or margarine, softened
2/3 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon Durkee 100% Pure Vanilla Extract
3/4 cup flour
2 teaspoons Durkee Ground Cinnamon
1/2 teaspoon Durkee Ground Nutmeg
1/4 teaspoon baking soda
1/8 teaspoon Durkee Ground Cloves
1 1/4 cups uncooked quick oats (not instant)
1 cup peeled and finely chopped Granny Smith apple
1 cup chopped dates
1 cup coarsely chopped walnuts, toasted

Preheat oven to 325 degrees F.

Beat butter, sugars, egg and vanilla with electric mixer at medium speed until fluffy.

Combine flour with spices; gradually add butter mixture on low speed. Add oatmeal and beat until mixed.

Stir in finely chopped apples, dates and walnuts. Drop cookie dough by teaspoonful on greased OR parchment lined baking sheets.

Bake for 15 to 18 minutes or until lightly browned and tops appear dry. Cool on baking sheet for 5 minutes; remove to wire rack to cool.

Makes 42 cookies
