I made these for a 4th of July gathering. There's always a lot of kids around my house on that day, so I always make some sort of cookies. And what I learned about these cookies is that you need to slightly flatten them before baking. I used the tongs of a fork to do so, and the cookie's appearance got them nicknamed "hamburger cookies" because they sort of looked like hamburger patties that were ready for the grill. But, they are delicious.
RED VELVET CRINKLE COOKIES
1 cup powdered sugar
1 tsp. cornstarch
1 (2-layer-size) box Duncan Hines Signature Red Velvet Cake Mix
6 tablespoons butter, melted and cooled
2 large eggs
1 teaspoon lemon zest
Preheat oven to 375 degrees F.
Place powdered sugar and cornstarch in shallow dish. Mix with a fork to blend; set aside.
Place (dry) cake mix, butter, eggs and lemon zest in large mixing bowl. Mix by hand until well blended and a dough forms.
Form dough into 1-inch balls and roll in powdered sugar mixture. Place on cool, ungreased cookie sheet about 2-inches apart.
Bake, one sheet at a time, in center of oven for 9 to 11 minutes or until set. Cool 1 minute. Transfer to a wire rack to cool completely. Store in airtight container with wax paper between layers.
Tips: for consistency, use a small coop (1- to 1 1/4-inch diameter) to form dough into balls.
Makes about 2 dozen
