Recipe: Apple Corn Bread

APPLE CORN BREAD

1 cup cornmeal
1 cup flour
1/2 cup brown sugar
4 tsp baking powder
1 1/4 cups milk mixed with 1 tsp. apple cider vinegar
1 cup diced apple
2 tbsp oil
1/2 cup orange marmalade (or other jam)

Preheat oven to 400 degrees F. Grease an 8 or 9-inch square baking pan.

Combine cornmeal, flour, brown sugar, and baking powder.

Stir together combined milk and vinegar, apple, and oil. Stir into dry mixture just until combined. Put one half of the batter in prepared baking pan. Evenly top batter with 1/2 cup jam and then top with remaining batter.

Bake at 400 degrees F for 25 minutes. Do not overbake. Allow to cool slightly before cutting.
