TASTY NUT MUFFINS
1 1/4 cups milk
1 tsp vinegar
2 eggs, beaten
1/2 cup honey
1 cup vegetable oil
1 cup nuts, chopped
2 cups whole-wheat flour
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp soda
3/4 tsp ground allspice
3/4 tsp ground ginger
3/4 tsp ground cinnamon
Preheat oven to 375 degrees F. Grease and flour 18 muffin pan cups.
Stir vinegar into milk; set aside.
Combine eggs, honey, and oil; mix well. Stir in nuts, and set aside.
Combine dry ingredients and add to egg mixture alternately with milk mixture, stirring only to blend. Spoon batter into prepared muffin pans, filling 2/3 full.
Bake at 375 degrees for 20 minutes or until done.
Makes 18 muffins
