Recipe: Apple Crunch (using cranberries, oats, and pecans)

APPLE CRUNCH

3 cups peeled, chopped apples
2 cups fresh whole cranberries
1/3 cup granulated sugar
1/3 cup brown sugar
Vegetable cooking spray
FOR THE TOPPING:
1/2 cup margarine
1/4 cup brown sugar
1 cup uncooked oatmeal
1/3 cup all-purpose flour
1/2 cup chopped pecans

In large bowl, combine apples, cranberries, granulated sugar and 1/3 cup brown sugar. Toss together well. Pour fruit mixture into a 9x13-inch pan coated with vegetable cooking spray.

TO PREPARE THE TOPPING:
In small bowl, combine margarine, 1/4 cup brown sugar, oats, flour and nuts. Mix together with a fork to achieve a crumbled texture. Sprinkle topping mixture over the fruit.

Bake at 350 degrees F for 45 minutes or until done.

Makes 16 squares
