BEEF WITH ARTICHOKES AND TOMATOES
1 pound ground beef round
1/4 cup skim milk
1/4 cup bread crumbs
1 egg
3 tablespoons chopped parsley
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons oregano leaves
1/4 teaspoon pepper
2 teaspoons vegetable oil
1 (9 ounce) package frozen artichoke hearts, defrosted
2 cups cherry tomatoes
1/4 cup beef broth
Mix beef, milk, bread crumbs, egg, parsley, lemon peel, oregano and pepper. Shape into 1-inch balls.
Heat oil in large non-stick surface skillet until hot. Brown meatballs in oil.
Stir in artichoke hearts, tomatoes and beef broth. Reduce heat and cover. Simmer until vegetables are hot and beef is cooked, about 5 minutes. Serve immediately.
