Recipe: Apple-Nut Oat-Bran Muffins (using applesauce and egg whites) (1989)

DRY INGREDIENTS:
3/4 cup toasted oat bran
3/4 cup all-purpose flour
1/2 cup whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
WET INGREDIENTS:
2 large egg whites, lightly beaten
1 cup apple sauce
1/2 cup plain low-fat yogurt
3 tablespoons vegetable oil
3 tablespoons honey
1 cup finely chopped apples
1/2 cup chopped pecans, toasted
Preheat oven to 400 degrees F. Coat twelve 2- inch muffin-pan cups with cooking spray.
Combine the dry ingredients in large bowl.
Combine egg whites, apple sauce, yogurt, oil and honey in another bowl. Add to flour mixture and stir just until moistened. Fold in apples and pecans. Pour batter into muffin cups.
Bake 30 minutes or until toothpick inserted in center comes out clean.
Makes 1 dozen
