Hi Pat :-) Here are two recipes for you to try. One is from the internet and one is a recipe that our dear Betsy posted here at recipelink. As for other apple recipes, type the word "apple" in the search box at this site and you will find many, many recipes using apples.
Apple Squares
These apple pastry squares are filled with sliced fresh apples and spices.
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup plus 2 tablespoons butter
1 egg, divided
milk
1 cup crushed corn flakes
8 cups peeled, cored, thinly sliced tart apples
2/3 cup sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 cup sifted confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons water
In a large mixing bowl, stir together flour and salt. Cut in butter with a pastry blender until mixture is crumbly.
In a 1 or 2-cup measure, beat egg yolk lightly with a fork, adding just enough milk to make 2/3 cup. Stir milk and egg yolk mixture into flour mixture, blending with a fork just until mixture holds together and comes away from side of bowl.
Dived dough into 2 portions. Roll half of the dough out to line a 10 1/2- x 15 1/2- x 1-inch baking pan (jelly roll pan). Place dough in the pan, pressing lightly into bottom and up sides to form the bottom crust.
Sprinkle crushed corn flakes over the bottom crust.
In a large bowl combine apple slices with sugar, ground ginger, and ground cinnamon; stir to blend well. Arrange apple mixture over bottom crust.
Roll out remaining dough and place over top of apples. Pinch edges of dough together to seal. Brush top crust with lightly beaten egg white.
Bake at 400 for 50 to 60 minutes, or until golden brown. Comvine confectioners' sugar and vanilla; stir in enough water to make frosting. Let pastry cool slightly then spread with frosting while still warm. Cut into squares.
Makes about 16 to 20 apple squares.
Apple Walnut Squares
4 cups apples, peeled & coarsely chopped
2 eggs
2 tsp vanilla
2 tsp baking soda
2 tsp cinnamon
1 3/4 cups sugar
1/2 cup vegetable oil
2 cups flour
1 tsp salt
1/2 cup chopped nuts
TOPPING:
1 cup confectioners sugar
1/2 tsp vanilla
1 1/2 tbsp lemon juice
1 Tbsp water
Combine apples and sugar - set aside. In large mixing bowl mix eggs, oil and vanilla, beating for 1 minute. Add combined dry ingredients alternately with apple mixture. Stir in walnuts.
Bake in greased and floured 13x9x2-inch pan at 350 degrees for 45-50 minutes, or until done. Do not underbake.
When cake is cooled, drizzle topping on cake.
