Recipe: Blender Gingerbread (Mary Dunbar recipe, 1940's)

BLENDER GINGERBREAD

1 1/2 cups presifted flour
1/2 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
2 eggs
1/2 cup molasses
1/2 cup butter or margarine, softened
1 cup sugar
1/2 cup buttermilk

In mixing bowl, combine flour, baking soda, spices and salt. Set aside.

Into blender container, put all remaining ingredients, except buttermilk. Cover and run on BLEND 30 seconds. After 20 seconds, remove inner measuring cap and gradually pour in buttermilk.

Pour into dry ingredients and mix until smooth. Pour batter into greased and lightly floured 8-inch square baking dish.

Bake in 325 degree F oven for 40 minutes.

Makes 1 (8-inch) cake
