Applesauce Cookies
1 cup granulated sugar
1 cup packed brown sugar
1 cup Blue Bonnet Regular Stick margarine
2 cups applesauce, any variety
1/2 cup light sour cream, or buttermilk
4 large eggs
4 cups all-purpose flour
2 cups quick-cooking oats
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 cup chopped nuts, any variety
1 cup semi-sweet chocolate chips
1/2 cup raisins, (optional)
PAM No-Stick Cooking Spray
Preheat oven to 350F.
In a medium bowl, combine the granulated sugar, brown sugar and the Blue Bonnet .
Using an electric mixer, beat on medium high speed until well blended. Add the applesauce, sour cream and eggs. Mix in the flour, oats, baking soda, salt, cinnamon and nutmeg until well blended. Using a rubber spatula, stir in the nuts, chocolate chips and raisins, if desired.
Coat a cookie sheet with cooking spray. Drop cookie dough by tablespoons onto the cookie sheet.
Bake 10-12 minutes or cookies are just beginning to brown slightly on edges. Cookies should be big, soft and fluffy.
Yield: About 48 cookies
