Rocky Top Big Orange Bars
A slightly trimmed down version of a traditional bar cookie, these taste great with any variety of preserves. Try a different flavor to match your team colors!
1/2 cup butter, softened
1/2 cup sugar
1/2 cup whole wheat flour
3/4 cup all-purpose flour
3/4 cup dry quick-cooking oats
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
Cooking spray
1 (10-ounce) jar peach preserves
2 tablespoons chopped pecans, toasted
2 tablespoons shredded coconut, toasted
Combine butter and sugar in a small bowl; stir in flours, oats, baking powder and cinnamon. Set aside 3/4 cup of mixture.
Press remaining mixture into an 11- x 7-inch pan coated with cooking spray; spray crust with cooking spray.
Bake at 400F for 10 minutes.
Spread preserves over warm crust. Combine remaining flour mixture with pecans and coconut; sprinkle over preserves.
Bake at 400F for 20 minutes. Cool and cut into bars.
Yield: 16 servings.
