Recipe(tried): Arepas de Vieques for Mayra/PR

Appetizers and Snacks
Of course, you can fill your AREPAS with whatever filling you prefer. Arepas from Vieques are different from the AREPAS of South America. Welcome to this site fellow PuertoRican!


Arepas de Vieques
(Vieques-style fritters)
(serves 12 or more)

1 1/3 cups whole milk
2 oz grated cheddar cheese
2 tablespoonfuls margarine or cooking oil

(B)
1 large egg at room temperature
1 1/2 cups cornmeal
1/2 cup wheat flour
1/4 teaspoon salt, or to taste
1 teaspoon sugar or equivalent substitute such as Equal or Splenda

Enough frying oil

Melt the cheese and margarine in the milk at medium or medium-low heat. Stir occasionally until the cheese and margarine have melted. Add the egg and whisk into the mix. Mix together the remaining ingredients in (B). Slowly add them to the mix, whisking frequently to avoid lumping. Remove from the heat and allow the mixture to cool, or refrigerate until the next day. Blend all ingredients together. Use a ladle to measure out enough mixture to form flour patties, which can be anywhere from three to six inches in diameter and about as thick as a loaf of sandwich bread. Fry in a deep skillet with enough oil to assure even cooking on both sides. Remove when color is a light golden tan. Serve while still warm.

You can open your AREPAS & fill them with whatever you want. Here is another recipe in Spanish. Let me know if you prefer it translated.

Las famosas arepas de Vieques:
Esta receta es de una gran cocinera viequense, Epifania V lez (Do a Fana) del barrio Destino, que en paz descanse.

1/2 lb. Harina
1/4 cda. baking soda
1/8 lb. manteca

Prepare un vaso de 8 onzas de agua con sal a gusto. Ponga todos los ingredientes, excepto el agua con sal, en un cacharro grande. Poco a poco a ada el agua con sal mientras mezcla con las manos todos los ingredientes. Siga a adiendo el agua hasta que todos los ingredientes unan en una masa y la masa no se le pegue a los dedos.
Deje la masa descansar por una hora. Despu s de la hora, divida la masa en bolas de la mitad del tama o de un pu o. Ponga las bolas en un plat n y d jelas descansar media hora. Despu s de la media hora, coja las bolas de masa y d les forma de disco y col quelas en una hoja de hornear de metal. Pre-caliente el horno a 300 grados.
Coloque las arepas en el horno y horn e por 10 a 15 minutos, volt e las arepas. Horn e por 10 minutos m s o hasta que las arepas se vean doradas. S rvalas con habichuelas guisadas con patitas de cerdo.
