Recipe: Aromatic Balsamic Chicken (baked using Dijon mustard and onion)

AROMATIC BALSAMIC CHICKEN

4 chicken breasts with skin and bone (no wings) and 8 chicken wings (or 1 whole chicken in eighths)
5 tablespoons Dijon mustard
1/2 cup balsamic vinegar
1 large sweet onion, chopped (Walla Walla or Vidalia)
Kosher salt and fresh ground pepper

Spray Pyrex dish with non stick spray (make sure you spray the sides).

Sprinkle salt and pepper over chicken. Spread mustard all over chicken. Place in prepared baking dish and pour vinegar on top of chicken. Add chopped onion on top and around. Marinate for at least 1 hour (if possible) or refrigerate for marinating longer.

Preheat oven to 350 degrees F.

Bake for approximately 1 3/4 to 2 hours, basting one or two times during cooking or grill.

Makes 6 servings
