CHICKEN CHUNKS
1 cup cracker crumbs
1/2 cup freshly grated parmesan
1/3 cup finely chopped walnuts
1 clove minced garlic
1 tsp dried thyme
1/2 tsp dried tarragon
1/2 tsp salt
6 chicken breasts
1/2 cup butter melted
Mix all ingredients except chicken and butter.
Cut chicken into bite sized chunks. Dip in butter then roll in crumb mixture.
Freeze in a single layer then pack into airtight containers.
To reheat, bake uncovered in a single layer at 400 degrees for 15-20 minutes or until golden brown. There is no need to thaw before baking!
