Recipe: Ricotta and Tomato Toast (serves 1)
SandwichesRICOTTA AND TOMATO TOAST
1 slice whole wheat bread, lightly toasted
1/4 cup part skim ricotta
1/2 small tomato, sliced
fresh basil leaves
1/4 teaspoons olive oil
salt and pepper (to taste)
Spread toasted bread with ricotta, top with tomato slices and basil leaves. Drizzle with olive oil and season with salt and pepper.
Makes 1 serving
