Recipe: Auntie's Potato Salad

AUNTIE'S POTATO SALAD

Boil an equal number of red skinned potatoes* and eggs, about 6 of each.

Mix together as directed on package:
1 envelope Good Season's Garlic/Herb Dressing Mix

Peel potatoes and slice thin. While potatoes are very warm, pour the dressing over them. Refrigerate for at least an hour.

When potato mixture is chilled add:
cut up hardboiled eggs (save some slices for top)
some minced fresh parsley
Hellmann's Mayonnaise
a little salt and pepper

If the salad seems a little stiff, add a little milk to the mayonnaise, until it's the way you like it.

Place in serving bowl and decorate the top with egg slices and parsley sprigs

Most people just love this, some hate it...very different, but, i think delicious salad, excellent with ham.

*You can use other kinds, Idahos for instance, but I think red skinned potatoes hold their texture better.
