AVOCADO WITH FRESH TOMATO AND PEPPER DRESSING
2 avocados, peeled and seeded, cut in lengthwise slices
lettuce
sprinkle of lemon juice
1 large ripe tomato, peeled and chopped
1/2 of a green bell pepper, chopped
3 tbsp chopped onion
3 tbsp bottled oil-and-vinegar dressing
2 tbsp chopped celery
1 clove garlic, minced
Arrange avocados on crisp lettuce on 6 salad plates. Sprinkle with lemon juice. Set aside.
Combine tomato, green pepper, onion, and bottled oil-and-vinegar dressing, celery and garlic; mix well. Spoon dressing over avocados and serve immediately.
Makes 6 servings
