Recipe(tried): Baked Almond Chicken (or fish filets)

Baked Almond Chicken

4 boneless chicken breast halves
1 egg white
2 tablespoons water
1/3 cup sliced almonds
1 garlic clove, minced
generous grind of fresh black pepper
cayenne pepper to taste (I use about 1/8 tsp)

Whisk egg white with water, garlic & spices (you can use any to taste - these are just the ones we like) until well combined. Dip chicken breasts first into egg white, allowing excess to drip off back into bowl, and then into almonds, pressing on almonds lightly so they adhere to chicken. Place on foil lined pan (again, just my choice for easy clean up) and bake in a 424 oven about 15 - 20
minutes, or until chicken is done.

Enjoy!

This also works very well with fish fillets, only I use a dill spice combination then.
