Recipe: Baked Flounder with Bacon

Main Dishes - Fish, Shellfish
BAKED FLOUNDER WITH BACON

2 lb flounder filets
4 slices bacon
4 thin slices lemon
1/2 cup condensed tomato soup
1/2 cup water
2 bay leaves
salt and pepper (to taste)
1 large onion, sliced
paprika

Place fish on top of 2 slices bacon in greased baking dish. Cover with remaining bacon and lemon slices.

Combine tomato soup and water. Add bay leaves, salt and pepper and sliced onion. Pour over fish.

Bake in moderate oven (350 degrees F) 30 minutes.

Place on heated serving platter. Strain sauce around fish. Sprinkle with paprika.

Servings: 4
