SCALLOPS OVEN-FRIED
2 pounds scallops
2 eggs
2 tablespoons water
salt and pepper
1/2 teaspoon thyme
1/4 teaspoon dill
1 cup cracker crumbs
2 ounces butter, melted
4 teaspoons chopped chives
buttered toast
Wipe scallops with damp cloth.
Break eggs into mixing bowl, beat until foamy.
Add water, season with salt and pepper to taste, thyme and dill, mix well.
Dip scallops into egg, then in cracker crumbs. Arrange in shallow baking dish, pour melted butter over scallops.
Oven-fry or bake in preheated oven (450F) 20 minutes.
Serve piping hot over buttered toast placed on preheated individual plates. Garnish each serving with chopped chives.
VARIATIONS:
Use small bay scallops, also. Oven time 10 to 15 minutes, depending upon size.
If desired, bacon strips may be added 5 minutes before removing from oven.
