Recipe(tried): Baked Garlic Chicken, Scalloped Potatoes with Bacon
Menus Tonight for dinner we had a simple but delicious recipe found on the back of Lipton soup mix (I admit I altered it a little)Baked Garlic chicken with it I served a delicious recipe recently given to me by Janice, Australia Scalloped Potatoes with Bacon. I like the scalloped potatoes very much but I did alter a few things to (I think) improve on an already excellent recipe. I cubed my potatoes instead of slicing them to allow better distribution of the cheese, and I also increased the cooking time of the potatoes with and without the cheese added. I also did not like the clumps that formed in the bacon mixture cooked in the microwave so I altered it to cook in a skillet allowing for better control over the bacon. I selected mild cheddar for the cheese because we are not big on sharp cheddar but next time I think I will try it using sharp to add an extra zing to it. With the meal I also fixed southern style turnip greens for my husband, who loves them (I do not care for turnip greens). I hope everyone has a nice evening.
Baked Garlic Chicken
1/3 c. Mayonnaise
1/4 c. grated Parmesan cheese
3 Tbsp. Garlic Mushroom Soup Mix
4 boneless chicken breasts
Dry Bread crumbs
In a small bowl combine mayo, cheese and soup mix. Using a rubber spatula, spread mixture over chicken breasts ,one at a time, and lay chicken flat in a baking dish sprayed with non-stick cooking spray. Sprinkle bread crumbs over chicken until fully covered (only lightly). Bake uncovered at 400 for 30 to 45 minutes (cooking time will vary depending on thickness of chicken).
Scalloped Potatoes with Bacon
4 medium potatoes (about 1 pound)
4 bacon slices
3 green onions, chopped
half pint sour cream
1 cup cheddar cheese
Clean and peel potatoes, and cut into small cubes (or slice thinly as the orininal recipe stated), cover and cook on high 10 minutes or until potatoes are tender, drain any water in pan. Combine bacon and green peppers in small skillet and cook until bacon is browned and onions are tender. Spread sour cream over potatoes, top with bacon mixture and sprinkle cheese on top. Cook in microwave about 5 minutes. Remove pan and stir cheese. (It may be necessary to add a little more cheese to completely cover the potatoes). Continue cooking about 2 minutes to completely melt cheese.
