GARLIC-HONEY MARINATED PORK LOIN
3/4 cup lemon juice
3/4 cup honey
6 tablespoons soy sauce
3 tablespoons dry sherry
6 cloves garlic, minced
1 (3- to 3 1/2-pound) boneless pork loin roast
fresh parsley sprigs, sage leaves, lemon wedges (optional garnishes)
Combine first 5 ingredients in a large shallow dish; add roast. Cover and chill 8 hours, turning roast occasionally.
WHEN READY TO COOK:
Bake at 325 degrees F for 1 hour and 40 minutes or until meat thermometer inserted in thickest portion registers 160 degrees F.
Garnish, if desired.
