BANANA CHIP STREUSEL LOAF
FOR THE STREUSEL TOPPING:
1 tbsp plus 1/2 cup uncooked Cream of Wheat cereal, divided use
1 tbsp sugar
1 tbsp plus 1 1/2 cups all-purpose flour, divided use
1 tbsp margarine
1/2 tsp ground cinnamon
1/4 cup miniature chocolate chips
FOR THE BREAD:
1/2 cup firmly packed brown sugar
1/3 cup margarine, softened
1/2 cup egg substitute
1 tsp vanilla
2 medium ripe bananas, mashed
1 tbsp baking powder
powdered sugar glaze (optional topping)
Preheat oven to 350 degrees F. Grease and flour a 8 1/2x4 1/2x2 1/2-inch loaf pan
TO PREPARE THE STREUSEL TOPPING:
Combine 1 tablespoon cereal, sugar, and 1 tablespoon flour. Cut in 1 tablespoon margarine until crumbly. Stir in cinnamon and chocolate chips. Set aside.
TO PREPARE THE BREAD:
In large bowl, with electric mixer at medium speed, beat brown sugar and 1/3 cup softened margarine until creamy. Mix in egg substitute and vanilla. Beat in banana until almost smooth; set aside.
Combine the remaining 1 1/2 cups flour, the remaining 1/2 cup Cream of Wheat, and baking powder; stir into banana mixture just until moistened. Spread batter into prepared loaf pan; sprinkle with Streusel Topping.
Bake at 350 degrees F for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack.
Drizzle with powdered sugar glaze, if desired.
