Recipe: Baked Lemon Chicken (4 variations)

Hello Lois,

Here are four versions of Baked Lemon Chicken but I don't know if any of them is the exact recipe you're looking for. If none of them ring a bell please feel free to post again with any other details or ingredients that might help in the search.

Lemon Baked Chicken (whole chicken)

1 broiler-fryer chicken (about 3 1/2 lbs.)
Melted butter or margarine
3 tbsp. melted butter or margarine
2 tsp. lemon juice
1/2 tsp. prepared mustard
1 tsp. Worcestershire sauce

Heat oven to 350 degrees.

Wash chicken; pat dry. Place chicken, breast side up, in open shallow roasting pan. Brush with melted butter. Bake 1 hour.

Mix remaining ingredients. Baste chicken with lemon mixture.

Bake 15 to 30 minutes or until done, basting once or twice.

Lemon Chicken (chicken pieces)

1/4 cup butter or margarine
1 frying chicken (about 3 lb.), cut up
1/3 cup lemon juice
1 tsp. dried thyme leaves, crushed
1 tsp. salt
1/2 tsp. pepper
1/8 tsp. garlic powder

Preheat oven to 450 degrees. Place butter in a 13x9x2-inch baking pan. Melt butter in oven while preheating (do not burn). Remove from oven.

Meanwhile, rinse chicken and pat dry.

Roll in melted butter. Arrange in dish, skin side down; set aside.

In a small bowl, mix lemon juice, thyme, salt, pepper and garlic powder. Baste chicken with some of the lemon mixture.

Bake for 20 minutes. With tongs, turn chicken over. Baste with juices and remaining lemon mixture. Bake 15-20 minutes longer or until tender and no longer pink when cut along the bone. Spoon juices over chicken. Transfer to a serving platter. Serve with potato or spinach salad and chocolate parfaits.

Makes 4 servings

Baked Lemon Chicken (chicken breasts)

4 chicken breast halves
4 tbsp. lemon juice
1/2 cup margarine
1 tsp. garlic powder
1 tsp. poultry seasoning
1/2 tsp. salt (or less)
Bit of white pepper

In casserole, put 4 chicken breast halves.

In saucepan, put 4 tablespoons lemon juice, 1/2 cup margarine, 1 teaspoon garlic powder, 1 teaspoon poultry seasoning, 1/2 teaspoon salt and bit of white pepper. Mix well after each addition.

Pour over chicken and bake in 350 degree oven for 1 hour. Baste often.

Easy Lemon Baked Chicken (breaded chicken breasts)

4 to 6 tbsp. margarine
4 boneless, skinless chicken breasts
1/4 cup lemon juice
1 egg, slightly beaten
Italian flavored bread crumbs

Preheat oven to 350 degrees. In an oven proof baking dish, melt 4 tablespoons of the margarine.

Meantime (and watch margarine in oven) combine lemon juice and egg. Dip chicken pieces in liquid, then thoroughly coat with bread crumbs. When margarine is melted, place coated chicken in baking dish and cover loosely with aluminum foil.

Bake for about 20 minutes, then turn the pieces over and add more margarine if needed. Bake an additional 20 minutes.
