Recipe: Baked Lima Beans

Here are a few recipes I found.

BAKED LIMA BEANS

1 lb. lima beans (soak at
least 3 hours and cook
tender)
1 can tomato soup
1/2 c. dark brown sugar
3 Tbsp. prepared French's
mustard
1 green pepper, diced
1 onion, diced
bacon strips (fry and cut up)
salt and pepper
a little catsup

Put in large bowl to mix. Put in casserole and bake 2
hours at 350 degrees.BAKED LIMA BEANS IN TOMATO SAUCE

1 (1 lb.) pkg. large lima
beans (dried)
6 slices bacon
1 c. chopped onion
2 (8 oz.) cans tomato sauce
1/4 c. light brown sugar,
firmly packed
2 tsp. dry mustard
2 tsp. Worcestershire sauce
1/2 tsp. dried oregano leaves
8 links sweet Italian sausage

In large saucepan, combine beans and 7 cups of water.
Bring to a boil and boil gently 2 hours. Remove from heat and
let stand, covered, for 1 hour. Again bring beans to boil and
boil 30 minutes or until tender. Drain, reserving 1/2 cup of
liquid. Cut bacon into 1/2-inch pieces and saute lightly; add
onion and saute until onion is tender and bacon is browned.
Preheat oven to 375 degrees. Combine beans, onion, bacon, tomato
sauce, reserved liquid, sugar, mustard, Worcestershire sauce
and oregano. Turn into 2 1/2 quart shallow baking dish. Cook
sausage and cut into small pieces and add to beans. Bake,
covered, 30 minutes. Remove cover and bake 15 minutes.BAKED LIMA BEANS

1 lb. dried lima beans or 4 or
5 cans lima beans (do not
drain)
3/4 c. brown sugar
1 tsp. dry mustard
1 bottle chili sauce
1/2 lb. bacon, fry and drain
on paper towel

Cook lima beans; drain all water, except save 1 1/2
cups. Add brown sugar, dry mustard, whole bottle chili sauce
and fried bacon (crumbled). Mix all together in a large baking
bowl. Put in 350 degrees oven and bake for one hour or until sauce
thickens a little.
